Lentil "Cream Sauce"

    Saute onions in a small amount of broth until soft but not browned.

    Add to the rest of the broth in a saucepan and add lentils.

    Simmer for about 15 minutes until lentils are very soft and coming apart.

    Cool the mixture.

    Place in blender and blend until very smooth.

    Add salt, pepper, and lemon juice to taste.

💡 Cook's Notes

This is a substitute for traditional cream sauces which rely heavily on fats (cream and butter). Here, the creamy nature of the lentil is used to serve the same purpose. May be used in place of any cream sauce. Add seafood and it's a great non-cream chowder. Pour it over steamed asparagus, broccoli, or other vegetables.
