Mike's Habanero Hot Sauce

In a large skillet, sauté onions, shallot, and garlic (and red bell pepper if using) in peanut oil until limp.

Add chopped habanero peppers and continue to sauté until all vegetables are limp and onions are translucent, about 5 to 10 minutes.

Add tomato sauce, vinegar, citrus seasonings, and other seasonings to taste.

Lower heat slightly and allow mixture to simmer and reduce into a slightly thicker sauce consistency. This will thicken the sauce and allow flavors to mingle at 212°F to establish the sauce's character.

Remove from heat, cover skillet with a well-fitting lid, and allow sauce to stand at room temperature for several hours until no longer warm. Flavors will continue to mature during this resting period.

Transfer cooled sauce to a blender, cover tightly and carefully to avoid spillage or splashing, and blend at high speed for several minutes until totally liquefied.

Pour into clean glass bottles with air-tight tops and keep refrigerated until used.
💡 Cook's Notes
**Seasoning Options:** Salt and ginger are essential. The other seasonings are optional. Without the additional spices and savory sauces, the sauce will be hot with dominant citrus/ginger flavors. Adding spices, sugar, and/or savory sauces makes the flavors more complex and interesting. In any event, the sauce will be very hot and intensely flavorful.
