    Purchase a PRIME quality cut using ribs 8 through 12. (Ribs 1-5 are chuck ribs, ribs 6-13 are loin ribs.)

    Trim off all fat from the roast.

    Place a rack in a low roasting pan.

  4. 4

    Butter both ends of the roast.

  5. 5

    Roast at 325°F for 2 1/2 hours (for a 15 lb cut).

    Baste every 30 minutes.

    Add vegetables to the pan to absorb the flavorful juices.

  8. 8

    Monitor internal temperature—never let the inner meat get hotter than 120°F (use an instant-read thermometer).

    To serve, cut off the ribs and slice the meat.
