Baked Summer Squash

Preheat oven to 350°F. Grease a 2-quart casserole dish with shortening or oil.

Parboil the vegetables:

Make the roux:

Stir squash mixture into the roux, then add 1 cup of the cracker crumbs and combine.

Transfer squash mixture to the greased casserole dish and sprinkle with remaining 1 cup cracker crumbs on top.

Bake for 25 to 30 minutes until mixture is thoroughly heated.
💡 Cook's Notes
For a richer topping, toss the cracker crumbs with melted butter before sprinkling over the casserole. You can also use specialty crackers instead of saltines for a different flavor.
