    Preheat oven to 375°F.

    Cook potatoes until just tender (either by boiling for 25-35 minutes or by baking in oven - if boiling, bring water to boil first and then insert the potatoes).

    Peel potatoes. Cut half into 1/4 inch slices; beat other half with butter until smooth and creamy.

    Layer ingredients in an oven baking dish: sliced potatoes/sugar-salt/mashed potatoes/marshmallows/and repeat.

    Cover top with more brown sugar.

    Bake uncovered for 30-40 minutes.

    Add new layer of remaining marshmallows on top and return to oven with broiler turned on. Watch constantly and bring out of oven just as brown crust forms on top of marshmallows, less than 5 minutes.

💡 Cook's Notes

Returning final dish to oven with top layer of marshmallows and NOT turning on the broiler will eventually brown the marshmallows, but the generalized heat will make them swell and spill over and later deflate. That is why it is best to place the dish in the hot oven, close the door, and then reset the oven to "broiler" setting and watch it until you need to remove it, causing marshmallow interiors to be slightly under-done and thus not inflate and deflate as badly.
