Instructions

    Dry the vegetables: Take sliced cucumber and tomatoes and hand toss gently with the salt. Place in colander and allow to sit at room temperature for 30 minutes to drain their juices.

    Meanwhile, place extra virgin olive oil, garlic, and vinegar in large mixing bowl.

    Drain and rinse chickpeas and add to bowl.

    Add onion, olives, and parsley.

    When ready, add the drained cucumber and tomatoes.

    Hand mix gently.

    Add chopped lettuce and hand mix again gently.

    Top with sprinkles of crumbled feta cheese.

💡 Cook's Notes

The salt-and-drain approach works well to prevent moisture from collecting at the bottom of the salad.
