    Melt butter with oil in a skillet. Saute onion, celery, garlic and bell pepper for five minutes or until translucent. Season with Cajun seasoning to taste (somewhat hot!).

    Add rice to skillet with cooked and seasoned veggies and saute together about two minutes more, stirring constantly.

    Add 2 1/4 cups of stock, bring to a boil, cover, lower heat, and simmer until rice is almost done, 30-40 minutes.

    Adjust seasoning with Cajun seasoning and/or salt, black pepper, and cayenne to taste. Garnish with chopped parsley.

💡 Cook's Notes

Optional method: Simply cook rice in a rice cooker with chicken stock instead of water and, when done, add the veggies with some Worcestershire sauce or soy sauce to darken. Amount of stock may need experimentation.
