Mike's Boston Baked Beans

Cook the bacon until well done but not burned. Let cool to become crispy.

Sauté chopped onion in a little vegetable oil (or 2 Tbsp bacon drippings) in a Le Creuset oven casserole pot for 5-10 minutes.

Add garlic and cook another minute to soften.

In a large mixing bowl, gently mix all other ingredients together with a wooden spoon or spatula.

Add the beans, bacon, and onion/garlic mixture and gently combine.

Place the mixture in the Le Creuset oven pot.

Cover with foil and bake at 325°F for 1 hour.

Remove foil and continue baking another 45 minutes, or even longer to fully caramelize the upper surface. Watch closely not to burn.
💡 Cook's Notes
Goes nicely with meatloaf or ribs for a hearty meal. Made for 2018 Thanksgiving at Strubecks. Sauté chopped red bell pepper for color In final baking process, sprinkle demerara sugar over the top to form a sugar crust when finished baking In 2018, in lieu of cayenne, added some cooked spicy Italian sausage for heat
