Mike's Roasted Potatoes

Preheat oven to 400°F. Place one rack just above midline of oven.

Mix equal volumes of the seasoning mix and light olive oil in a small dish. Add a little fresh ground black pepper and stir.

Clean, pat dry, and slice potatoes in dimensions desired.

Pour all of mix over potatoes and tumble to cover.

Place potatoes on oven pan, pieces not touching each other, and place on the rack in oven.

Bake 38 minutes at 400°F.

Turn oven off and leave door ajar to cool down if you want to keep warm for serving.
