Preheat oven to 375°F.

Prepare and partially bake a 9-inch pie crust according to basic pie dough recipe.

Thinly slice the onions.

Sauté onions in olive oil and butter over low heat until golden yellow.

In a bowl, beat together eggs, half-and-half, flour, salt, pepper, and nutmeg.

Mix half of the grated Swiss cheese into the egg mixture.

Place the sautéed onions in the pie shell.

Pour the egg mixture over the onions.

Sprinkle remaining cheese on top.

Bake for 25-30 minutes or until golden brown.

Garnish with chopped parsley before serving.
