**Make the dressing:** Cook the diced pear and wine in a saucepan over medium heat until pear is very tender, about 4 minutes.

Transfer to a food processor. Add vinegar, shallot, garlic, and mustard. Process until smooth.

With the motor running, slowly drizzle in the olive oil until smooth.

Stir in the thyme and season with salt and pepper. Set aside.

**Assemble the salad:** Place the spinach and radicchio in a large bowl.

Heat the dressing and mushrooms in a saucepan until just boiling.

Pour over the greens and toss quickly.

Top with sliced pear and toasted walnuts.

Serve immediately.
