    Saute onions in oil.

    Stir in curry powder and lentils.

    Add water and simmer until most of the liquid is absorbed, 10 to 12 minutes.

    Stir in up to 1/2 tsp kosher salt, to taste.

💡 Cook's Notes

Makes 3 servings (1 cup each). Combine 1 cup red lentils with 2 cups water, 1 bay leaf, and 1 clove garlic. Simmer until tender, 8 to 10 minutes. Remove bay leaf and garlic. Stir in up to 1/2 tsp salt. Drizzle each serving with 2 tsp extra virgin olive oil and some fresh ground pepper.
