Instructions

    Preheat oven to 400°F.

    Toss broccoli and cauliflower in 2 Tbsp extra virgin olive oil to coat.

    Spread on a baking tray and roast for 20 minutes.

    While vegetables are roasting, whisk together lemon juice, 1 Tbsp extra virgin olive oil, minced shallot, Parmesan cheese, salt, pepper, and lemon zest to make the dressing.

    Toss roasted vegetables with the dressing and serve.
