    In a stainless steel frying pan, heat 2 Tbsp butter and 2 Tbsp EVOO. Place half the squash cubes in pan, sprinkle with salt and pepper, and fry for about 10 minutes, long enough to start to brown the various surfaces. When ready, set aside and cook the other half of the squash the same way.

    Put squash in a large mixing bowl and pour EVOO over the squash, tossing to coat. Add all other ingredients and toss to coat everything with seasonings.

    Roast at 450°F for 20 minutes.

    Remove from oven, flip over the cubes, and return to oven for another 10 to 15 minutes.

    Best served hot.
