    Preheat oven to 400°F.

    Cut mini-potatoes in half and place in a bowl.

    Drizzle extra virgin olive oil over potatoes and toss to coat.

    Sprinkle Tony Chachere's seasoning on them to taste (no need for additional salt or pepper).

    Place potatoes evenly on an aluminum foil-lined baking sheet.

    Convert oven mode to convection.

  7. 7

    Roast for 30 minutes.

  8. 8

    Remove and rearrange the potatoes.

  9. 9

    Return to oven for another 15 minutes.
