    Preheat oven to 375°F.

    Place saffron in hot water.

    In a small, oven-proof pan suitable for stove-top use, sauté onions in 2 Tbsp chicken stock for 5 minutes over medium heat.

    Meanwhile, place rice in a strainer and rinse under cold water. Add to casserole and continue to sauté until rice is transparent, about 2 minutes.

    Add remaining stock along with saffron and water. Add a little salt and pepper.

    Cover and bake 15 minutes. If liquid not fully absorbed by that time, bake another 5 minutes.

    Remove from oven and leave covered until other parts of dinner are ready to serve.
