Oven Cooking Method

    Preheat oven to 350°F.

    Place whole squash in oven for several minutes to soften the skin.

    Remove and slice it lengthwise into two equal parts.

    Remove seeds.

    Place cut side down on a cookie tin and return to oven.

    Bake 45 minutes at 350°F.

    Turn cut side up and continue to bake a few minutes more.

    Try not to overcook; that will cause it to lose its spaghetti-like texture.

    When cooking is completed, pull out vegetable strands with a fork.

    Season with salt, pepper, herb seasonings, spices, Parmesan cheese, spaghetti sauce, or anything that would complement the flavor of the squash.

Microwave Cooking Method (Option 1)

    Cook in microwave a few minutes to soften skin.

  2. 2

    Remove, slice lengthwise, and remove seeds.

  3. 3

    Place in microwave dish with 1/4 cup water, covered with clear wrap.

  4. 4

    Cook 7 to 10 minutes at highest level.

  5. 5

    Check at 7 minutes to see how done it is.

    Remove and season as described for oven method.

Microwave Cooking Method (Option 2)

    Microwave whole squash 1 minute on high.

  2. 2

    Halve lengthwise and remove seeds and membranes.

  3. 3

    Place cut side down in 1/4 to 1/2 cup water for about 12 minutes or until fork tender.

  4. 4

    When tender, remove pasta strings with a fork.

  5. 5

    Top with dots of butter and Parmesan cheese, or red sauce and Parmesan, or sauce and shredded jalapeno cheese.

  6. 6

    Add garlic to taste.
