    Check if spinach is pre-washed (read package label). If not, wash and drain thoroughly.

    Place spinach in a large pot with 1/3 cup boiling water. Heat until spinach is fully wilted and reduced. Drain well.

    Preheat oven to 350°F (175°C).

    In a medium bowl, whisk together milk, Parmesan cheese, garlic, salt, and pepper.

    In a clean bowl, beat egg whites with a sprinkle of cream of tartar until stiff peaks form.

    Transfer the milk mixture to the spinach and beat together until well combined.

    Gently fold the egg whites into the spinach mixture, adding 1/4 at a time.

    Transfer to a small casserole dish.

💡 Cook's Notes

Don't over-salt if using Tony Chachere's spices, as they contain salt. **Quick microwave method:** Use a microwave-safe casserole dish, cover with plastic wrap, and cook on high for 3 minutes. Release the steam, recover, and cook on high for another 3 minutes.
