    Bake the potatoes for about an hour, or until done.

    Let them cool so they won't be too hot when handling.

    Cut potatoes open and scoop out the insides into a bowl.

    Combine the scooped potato with sour cream and dressing mix.

    Refill the potato skins with the mixture.

    Sprinkle with cheddar cheese and pepper if desired.

    Bake again at 375°F for 15 minutes.
