    In a large bowl, combine bulgur and 1 cup boiling water. Cover and let stand 30 minutes, or until water is absorbed.

    Add remaining ingredients (tomato, cucumber, green onion, parsley, mint, salt, lemon juice, and olive oil) and blend well.

    Cover and chill for 2 hours before serving.
