Whipped Sweet Potatoes

    Peel and cut sweet potatoes into 1-inch pieces for cooking.

    Preheat oven to 400°F. Cook sweet potatoes in large pot of boiling water until tender, about 15 minutes. Drain.

    Transfer to large bowl and add butter. Using electric mixer, beat until smooth.

    Add egg, sugar, pumpkin pie spice, and salt. Beat to blend.

    Transfer mixture to 8x8 inch baking dish. (Can be prepared one day ahead to this point.)

    Bake potatoes until they begin to brown around edges and are slightly puffed, about 25 minutes.

    Prepare topping: Mix together cornflakes, brown sugar, pecans, and melted butter in medium bowl.

    Spoon topping over baked potatoes and return to oven. Bake until topping is golden brown and crisp, about 10 minutes.
