Heat 12" skillet over medium heat for 5 minutes.

Meanwhile, beat egg lightly in shallow pan or pie plate. Whisk in butter, then milk and vanilla, and finally the sugar, flour, salt, and nutmeg. Continue to whisk until smooth.

Soak bread without oversaturating:

Pick up bread, allowing excess batter to drain off.

Swirl 1 Tbsp of extra butter in hot skillet. Transfer prepared bread to skillet.

Cook until golden brown, about 1 minute 45 seconds on first side and 1 minute on second side.

Add another tablespoon of butter for each new batch.
💡 Cook's Notes
**For firmer "European" breads:** Use 1 cup milk, only 1 Tbsp flour, and delete melted butter from the batter. Cooking may take an extra 15-30 seconds per side. **Tips:** Bread is better when at least a day old, or better yet, dried in a 200°F oven. A 3/4" slice is the width of your middle finger.
